2 tsp pumpkin pie spice
1 tsp chopped fresh thyme
1 1/4 lbs pork tenderloin
2 medium Bartlett pears, cored and sliced ¼-inch thick
1 large sweet potato, peeled and chopped
1 medium shallot, thinly sliced
1/4 cup dried cherries
Directions
1. Preheat oven to 400°. Spray rimmed baking pan with cooking spray. In small bowl, whisk oil, pumpkin pie spice, thyme, and ½ teaspoon each salt and pepper. Brush pork with ½ the oil mixture; place in center of prepared pan.
